This one-of-a-kind-rosé made from the indigenous variety – Rubin (a cross between Nebbiolo and Syrah) – is Bulgarian through and through. The grapes come from Georgiev and Milkov's 40-year-old vineyard in southern Bulgaria near Brestovitza. Fermentation takes place in stainless steel and French acacia, then the wine is aged 4 months in acacia. This rosé is teeming with freshly picked berry flavours like ripe red cherry and juicy strawberry. Short-term aging in acacia adds vanilla notes, a textured palate, and a lingering finish. Pair this medium-bodied rosé with salads, shellfish, and grilled chicken.
