Medium to full bodied, pronounced but silky tannins coming from the skin contact balanced with refreshing acidity. Further notes of quince, dried mango, orange rind, great elegance and length on the finish. A top quality example of the genre.
Hand picked grapes in trays. Open top spontaneous alcoholic fermentation of the juice with 15 -20 % pressed skins and one plunging down per day. Maceration with the skins for 30 days. Ageing in 400 L oak and acacia barrels for 12 months. No SO2 addition at any stage just topping the barrels with the same wine. Unfiltered.
Total production 610 bottles only!
Best with Asian and Middle Eastern cuisine, aromatic rice, smoked eggplant, roast game bird dishes.
