The wine presents a dark ruby red color, deeply infused with the essence of ripe dark cherries and berries. It features floral and peppery spice notes, along with high acidity. The pronounced spicy character, attributed to the clay soil, is a distinctive quality of this variety. The well-structured acidity is balanced with medium-high alcohol, which is nicely integrated into the wine. The finish has a hint of minerality and some savoury touches.
Food pairing: stewed hare, game and poultry, soups with smoked ham, Roast beef, lamb dishes and other grilled meats, hard and smoked cheeses
The KOLNA Vineyard Selection wines come from vines positioned on the middle slopes from an altitude between 150-300 meters. Here the vines are more exposed to the sun, the fertile soil start begins to be thinner, and due to the inclination, the slopes are well-drained.
Vinification: 10 days skin contact followed by alcoholic fermentation in stainless steel tanks and large oak barrels using natural yeast at 24-25 C temperature
